Based on the ideas, visions, and proposals presented in the lectures delivered during the workshop of the Dairy Department, Faculty of Agriculture – Al-Azhar University in Cairo, which was organized by the department in cooperation with the Association for the Advancement of Agriculture and Scientific Research under the title “Digital Transformation and Artificial Intelligence Technologies in the Quality and Safety of Milk and Dairy Products,” held on Wednesday, 12 Jumada Al-Thani 1447 AH, corresponding to December 3, 2025, under the patronage of Prof. Dr. Salama Gomaa Dawood, President of Al-Azhar University, and Prof. Dr. Mohamed Mabrouk Al-Danasouri, Dean of the Faculty, and chaired by Prof. Dr. Mansour Abdo Ali, Head of the Department, the following recommendations were concluded:
- Emphasizing the importance of integrating digital transformation technologies and artificial intelligence into the milk production and dairy processing system to enhance quality and safety.
- Commitment to the ethical and sustainable use of artificial intelligence applications in education, research, and practice within the agricultural sector, particularly in the fields of food and dairy.
- Supporting applied research that enables the development of intelligent systems for detecting contaminants and improving quality control.
- Encouraging research institutions, universities, and factories to cooperate in establishing and expanding local and regional genomic and proteomic databases for microorganisms expected to be present in dairy products.
- Benefiting from leading international experiences, particularly the Chinese experience, in digitalization and the application of artificial intelligence in the food and dairy industry.
- Working within the framework of digital and technological transformation to prepare universities to become exemplary models as major hubs for digital transformation and the use of artificial intelligence, with a focus on developing infrastructure and technological capabilities and strengthening research laboratories, thereby improving the quality of graduates and encouraging innovation and student entrepreneurship.
- Implementing projects to develop classrooms and training halls and transform them into smart halls equipped with advanced technological infrastructure, which enhances the quality of education and provides an advanced interactive environment.
- Conducting continuous student assessment using modern technologies to prepare a generation capable of facing future challenges.
- Preparing and equipping graduates who can keep pace with the digital labor market and modern technologies.
- Strengthening cooperation between universities, factories, and companies to link scientific research with real industrial applications.
- Supporting the establishment of specialized units within the Faculty of Agriculture to study artificial intelligence applications in the fields of food and dairy.
- Encouraging factories to adopt digital traceability systems and quality monitoring in accordance with modern international standards.
- Establishing distinguished agricultural cities with a new vision based on harnessing the human capacities of agricultural colleges and utilizing distinguished scientific expertise in land reclamation and transforming land from yellow to green using the latest digital technologies, artificial intelligence, innovative equipment, and advanced devices, in line with sustainable agricultural development, achieving food security, and exporting agricultural crops to improve the Egyptian economy.
- Calling for the organization of annual workshops to follow up on the implementation of these recommendations and to further develop digital transformation plans in the food and dairy sector.
These recommendations, with the visions and proposals they contain to advance the dairy sector, represent only a small part of the efforts required in the agricultural sector to strengthen food security.
The department administration and the association have a vision regarding mechanisms for implementing and applying these recommendations in practice. They hope that the relevant authorities within the Egyptian administration will give them due attention, as is customary in valuing the opinions of science and scientists in the development and progress of our beloved nation.
